and heavily trafficked barbecue and grilling forums on the internet
(www.thebbqcentral.com).
I wanted to spread the word about barbecue and grilling to a broader
audience. I also want to share my knowledge on the subject and introduce
the audience to some of the people within the barbecue and grilling
community who are helping bring this in to the mainstream.
I also do a regular podcast show (www.thebbqcentralshow.com)
with big names in the barbecue community to help supplement the
written word of the forum. So, it seemed that the next logical step
would be to take this to a whole different level…and here I am at
BBS Talk Radio…

Segment One: I am joined in studio by the "Airboss" Bill Rempe tonight. We talked about how competition bbq has a few issues with expense versus winning money to recoup that investment.
Segment Two: We field a few phone calls from folks as they weigh in on the competition bbq side of things...how much they spend on competitions and if they think that competition bbq will ever make it to TV some day.

Segment One: Update on BBQ Fred's condition after suffering a stroke a few weeks back at the bbq competition he was attending. We talk about his background, how he got in to competition bbq, fuel prices and how they might affect competition attendance this year and his thoughts on bbq competition cooking classes. Segment Two: Pellet Envy Pit Master, Rod Gray, joins me to talk about his competition experience. We also talk about a few of his awards from last year (2007), how he feels fuel prices will affect how much people will travel to bbq competitions, we learn about his bbq competition cooking class and we end up on Rod's thoughts on getting sponsorship deals with companies. Segment Two: I finish the interview with my Dad on the gas meter and then finish my thoughts about gas as a fuel source. I briefly start touching on the charcoal side of things which I will pick up on next show.

Segment One: Show intro and overview - I announce the fact that real music will be going by the way side starting next show and then I rip apart the "Searing/Sealing in the Juices" myth that is continually perpetuated on all of the cooking shows you see on TV. It just doesn't happen the way they tell you it does! Shame on Bobby Flay!!
Segment Two: Interview with Chris Finney creator of the "Reverse Sear Method" when grilling steaks and roasts. He explains exactly how to do it, and, what happens to the meat doing it his way vs. the traditional sear first then finish on low heat method that most people are familiar with.
